Please explain to me why plants and animal cells are specialized.

The reason for cells to be speacialized (i.e. to have additional custom attributes beyond that of a basic cell) is to allow for optimization of its function. So for example, the function of roots is to get air and water into the tree so the shape of the roots and its cells is optimized for this.

In early embryos do not have specialized cells. As an embryo grows and matures - cells start specializing to improve their function and support the development of a complex and growing individual. The cells specialize into specific functions, they group together to create tissues and eventually, these tissues accumulate and group to form organ systems.

In a blastocyte (3–5 day old embryo), the inner cells differentiate into the different types of cells critical for making up the organism’s body - the heart, stomach, lung, and other major body systems.
