How granular can data collected as aggregated be analyzed at a granular level?

Quantitative measures can be grouped into categories for analysis and retain properties of their measurement.

But data collected at a higher, aggregated level can't go down to a deeper level of granularity later. Grouping results in data loss of some sort.

For example, if you do decide to collect age as ordinal data, you can't calculate the average age later on and your analytics will be limited to "age by groups;" you won't have the option to analyze it as ratio data.
